Master of the Grill

America’s Test Kitchen is, of course, an actual test kitchen in Brookline, Massachusetts, where the editors behind food-favorite publications Cook’s Illustrated and Cook’s Country tirelessly test recipes until they’ve reached the self-proclaimed “best version.” With that in mind, it’s almost an understatement to say Master of the Grill is comprehensive on the subject of grilling; the Basics section alone contains 142 beef, lamb, poultry, fish, seafood, vegetable, tofu and fruit recipes. Once you’ve mastered those, head on to the Easy Upgrades section (like peach-glazed grilled chicken), followed by Serious Projects (think grilled lobster with chile butter). There are also helpful tips sprinkled throughout, plus an appendix of conversions and equivalents.
